Ingredients:

  • 1 cup raisins
  • 1 1/2 cup whole wheat flour
  • 1 1/2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter (softened)
  • 1 cup sugar
  • 3 x 113g applesauce cups
  • 1/2 cup skimmed milk

Icing

  • 1/2 cup butter (softened)
  • 1x 250g low-fat cream cheese container
  • 1 tsp vanilla
  • 1 1/2 cups icing sugar

Directions:
1. Pre-heat the oven to 350F (175C) and line your cupcake tray
2. In a medium bowl mix the flour, cinnamon, baking soda, and salt. Set it aside.IMG_3924
3. In a large bowl add the sugar and softened butter, cream till pale yellow

4. Add the applesauce cups and mix till all incorporated.

5. Add your flour mix to your applesauce mixture and alternate it with the milk.

6. When all incorporated, add the 1 cup raisins and beat a few times to incorporate.IMG_3934
7. Using an ice cream scoop drop your batter into the cups.

8. Bake for 40-50 min. Then cool

9. While baking, make your cream cheese icing.

10. In a bowl beat the softened butter, cream cheese, vanilla and sugar and set aside to later ice your cooled cupcakes.
