Birthday Cupcakes

Ingredients:
Cupcakes

  • 1 cup of butter (slightly melted)
  • 2 cups of sugar
  • 3 cups of flour
  • 1 tbsp baking powder
  • 2 tsp of vanilla paste
  • 5 eggs
  • 1/ 4 cup of cottage cheese
  • 1/2 cup of milk

Icing

  • 5 cups of icing sugar
  • 1 tsp of vanilla paste
  • 6 oz. of bakers white chocolate
  • Blue decorating gel pens to write out the letters
  • 1/2 cup of milk
  • 1/2 cup of butter

Directions:

Cupcakes:
1. Preheat the oven to 350 F (180 C)
2. Line your cupcake trays with cupcake paper and sent them aside
3. In a medium bowl mix the flour and baking powder and set then aside
4. In a large bowl cream your butter and sugar until pale yellow

5. Add the eggs and the vanilla and beat with an electric mixers for a good 2-3 minutes. The batter should almost double in size with frothiness!! (LOL my made up world)

6. Gradually add in the flour and baking powder mix, alternating with the cottage cheese and milk. Make sure to  really mix the batter well to avoid having lumps of cottage cheese in your batter.

7. When all the ingredients are well incorporated, use an ice cream scooper to evenly distribute your batter ( I used both a mini cupcake tray and a regular cupcake tray)

8. Let the cupcakes bake for about 30-35 min or until a toothpick comes out clean
9. let them cool before icing them

Icing:
1. Melt your white chocolate in a small sauce pan.

2. Let it cool before incorporating it with the other ingredients
3. In a medium bowl whisk together your milk, butter, icing sugar and vanilla till fully incorporated. Gradually add the cooled white chocolate and let it rest a few mounts before placing it in a piping bag to decorate your cupcakes.
