Honey Ginger Chicken Salad

Ingredients

Chicken Marinade

  • 2 Chicken Breast
  • 4 tbsp of Yogurt
  • 1 tbsp of Minced Ginger
  • Splash of Lemon Juice

Honey Ginger Dressing

  • 1 tsp of minced ginger
  • 1 tsp of honey
  • 4 tbsp of Olive Oil
  • 1 tbsp of Light Mayonnaise
  • 1 tbsp of Lemon juice
  • Splash of  White Wine Vinegar
  • Sprinkle of Club House Lime and Herb blend
  • Salt and Peper to season

Salad

  • 1 box of Mixed Greens
  • 5-6 Medium Tomatoes
  • 2 Avocados

Directions

Chicken Marinade

1. In a bowl combine the 4 tbsp of yogurt, 1 tbsp of minced ginger and lemon, mix them well. Then add the chicken breasts and let them marinade for a minimum of 30 min or until you are going to grill them (this can be done the night before as well).

2. In a measuring cup, combine the olive oil, ginger, honey, mayonnaise, lemon juice, herbs, salt, pepper and vinegar and whisk them all together. refrigerate till its time to serve the salad.

3. On a clean cutting board carefully cut the tomatoes into small cubes and place them in a bowl on the side,

4. Then cut the avocados, also in cubes and with a large spoon, scoop out the cubed avocado into separate bowl. Pour a generous amount of lemon juice on the avocado to prevent it from turning brown.

5. In a large bowl, combine the mixed greens, tomatoes and avocados and set them aside while you grill the chicken breasts

6. Remove the chicken from the marinade, in a plastic ziplock which is tightly sealed gently pound the chicken breast to have each piece at the same thickness.

7. In a hot grilling pan, lightly greased, start to grill the chicken, about 4-5 minutes each side (check that the center is fully cooked and no longer pink). When both chicken breasts are completely cooked through, remove them from the heat and let them cool a bit before slicing them and tossing them in the salad.

8. When the chicken has cooled, slice them evenly and toss them into the large bowl with the mixed greens, tomatoes and avocados. Drizzle the dressing on top and toss well so the dressing is fully incorporated.
