Peanut Butter Snickerdoodle Cookies

Ingredients

  • ½ cup of butter
  • ¾ cup of peanut butter (smooth)
  • 1 ½ tbsp of honey
  • ½ cup of sugar
  • ½ cup of brown sugar
  • ½ tsp of baking powder
  • ½ tsp of baking soda
  • 1 tsp of cinnamon
  • ½ tsp of sal
  • 1 cup of all purpose flour
  • ¼ cup of coconut flour
  • 1 egg
  • ½  tsp vanilla paste
  • 1 tsp of cinnamon
  • 1/3 cup of sugar

Directions:

1. Preheat oven to 375 F (190 C).

2. Grease 2 cookie trays and set them aside

3. In a small bowl combine the all purpose flour, coconut flour, baking soda, baking powder, cinnamon and salt, and set it aside.

4. In a large bowl, combine the butter, honey and peanut butter.  Beat until well combined.

5. Then add the egg and vanilla paste.  Stir until fully incorporated.

6. Add both the sugar and brown sugar.  Mix well.

7. Gradually add the flour mix, and make sure to blend well after each scoop.

8. Using an ice cream scooper  portion the dough into large balls, then divide it into 2 smaller portions

9. Stir the 1 tsp cinnamon and 1/3 cup sugar in a small bowl to roll the cookie dough in it.

10. With a fork,  press a criss-cross pattern onto the cookies.

11. Arrange the cookie dough on the cookie trays and bake them for 8-10 miuntes or until the cookies are slighly golden on the edges.

12. Allow the cookies to cool before removing them from the trays.
