Chocolate Chip Cupcakes

Ingredients

  • 1 cup of light butter
  • 2 cups of granulated sugar
  • 2 tsp of vanilla extract
  • 5 eggs
  • 2 cup of milk
  • 3 cups of all-purpose flour
  • 3 tsp of baking powder
  • 2 cups of mini semi-sweet chocolate chips

Icing

  • 1 kg of icing sugar
  • 1 cup of light butter
  • 1/2 cup of milk
  • 1 tbsp of vanilla extract

Directions
Preheat the oven to 350 F (177 C) and line your cupcake trays with cupcake cups.

1. In a medium bowl mix tour flour and baking powder and set it aside.

2. In a large bowl cream your butter and sugar till pale yellow, about 1-2 minutes.

3. Add the 5 eggs and vanilla and beat the batter till its fluffy and doubles in size.Chocolate Chip Cupcakes

4. Gradually add in the flour mix alternating with the cup of milk.

5. When the batter is all combined fold in the chocolate chips with a spatula.

6. Using an ice cream scoop evenly divided the batter into both regular and mini cupcake trays.

7. Bake the cupcakes for 18-20 min and 13-14 minute for the mini cupcakes.

8. When the cupcakes are ready and cool you can then ice them.

9. For he icing, place all the ingredients (sugar, butter, vanilla and milk) into a large bowl. Mix them all well till the texture of the icing is creamy and he color is a pale white.

10. Using a piping bag or a spatula ice tour cupcakes, serve and enjoy.
